A photo on Friday, because sometimes all you need is the picture. Did you happen to notice that last week it was truly ONLY a photo?! Well, this week I have a few quick words about this beautiful watermelon cake.
Sammy is turning 5 very soon, and he had his first celebration this week. With lots of little ones on hand in celebration mode, I knew healthful food was a necessity. Though with my Sammy really wanting cake, this watermelon cake was created!
I simply took a watermelon, cut off the top and the bottom, and cut off the peel. I trimmed a little here and a little there until I was left with a short cylinder. Then I scooped out just a little watermelon with a spoon from the top of the cylinder, leaving a little ridge along the top.
Fill with berries, melon, or any other fruit that suits your fancy. I added a few kiwi slices along the side of the watermelon, securing with toothpicks, to add a little more colour. And that’s it! I had thought starfruit would look amazing, but couldn’t find any at our local store. Maybe at yours though?
Simple, pretty, and healthy. A great cake to celebrate the start of a brand new year for my little wild-child!
